Ingredients

- 1 cup kale, thinly sliced
- 1 cup red cabbage, thinly sliced
- 2 medium carrots, cut into matchsticks
- 1 cup Brussels sprouts, thinly sliced
- 1/4 cup sliced almonds
- ¼ cup raisins
Dressing: - 1 (3-inch) piece ginger, grated fine
- 1/2 cup rice wine vinegar
- 1 tablespoon soy sauce
- 1 lime, juiced
- 2 tablespoons sesame oil
- 1/2 cup peanut butter
Instructions
- Slice the kale, red cabbage, carrots, and Brussels sprouts. Add them to a large bowl along with the almonds and the raisins.
- Prepare the dressing, in a small bowl combine all of the dressing ingredients and whisk them together until combined. Add the dressing to the large bowl and toss with the slaw. Serve cold with the Soy and Sesame Pork Tenderloin Skewers.
