I hope everyone is enjoying their December so far! For those of you who haven’t started baking yet – don’t fret! Here is a quick no-bake cookie/truffle that will impress!
This is a classic no-bake cookie recipe that if you are Italian you have likely tired before. These truffles are ridiculously easy to prepare. The most time consuming part is forming the balls. I am a perfectionist so this is the part that frustrated me the most. However, these treats have a beautiful presentation and would look great on any holiday cookie tray or even packed in a pretty box as a hostess gift or gift for a friend.
Keep in mind, these truffles taste like star anise so if you are not a fan of this flavour you may wish to substitute the liqueur for a lemon, orange, or cinnamon flavoured liqueur which I think would taste just as delicious.

Sambuca & Almond TrufflesSERVINGS – 45 truffles | PREP Time 30 min or less
500g slivered almonds
1 cup icing sugar
1 cup Sambuca or star anise flavoured liqueur
10 ounces of white chocolate
Silver candy balls, for decoration
Blend the almonds in a food processor until finely ground. In a large bowl, mix together almonds, icing sugar and liqueur. Form into about 1 to 1 ½ inch balls with your hands. Melt chocolate on a double broiler. Dip the balls into the chocolate using a small spoon and let harden on a parchment lined baking sheet. Put a silver candy ball on the top of each truffle. Refrigerate until ready to serve.
