We’ll all be home a lot more this holiday season and I wanted to give you some snack ideas to please the whole family.  There is something for everyone here!  The great part about these snacks is that they are very easy to make and the ingredients are all very accessible.  Please enjoy these festive holiday snacks!

Chocolate Truffles (Raw) (Vegan)

Description

Makes 10-12 large truffles


Ingredients

Scale
  • 1/2 cup coconut oil
  • pinch kosher salt
  • 1/4 cup maple syrup
  • 1 cup cocoa powder
  • cold water, as needed
  • Optional add-ins:
  • 1 tsp vanilla extract
  • 1/4 tsp peppermint extract
  • Optional toppings:
  • cocoa powder
  • shredded coconut
  • ground nuts
  • sprinkles

Instructions

  1. Melt coconut oil in a pot on low heat, then transfer it to a heat-safe bowl.
  2. Add salt and maple syrup, and whisk until evenly distributed in coconut oil.
  3. Add cocoa powder and whisk thoroughly.
  4. While whisking, add cold water, one teaspoon at a time until you see the mixture thicken.
  5. Cover the bowl with plastic wrap and put into the fridge for about 20 minutes or until the chocolate mixture sets solid.
  6. Take the chocolate mixture out of the freezer. It should be solid, but still malleable. If it’s too solid, I microwave for a quick 30 seconds just to soften it up so I am able to roll the truffles.
  7. Spoon about 1 tbsp of the chocolate mixture and form it into a round truffle with your hands.
  8. Then, roll each truffle in your desired topping. Place on a parchment-lined baking sheet while you make the rest of your truffles.
  9. Keep the truffles in the fridge in an airtight container for about a week. They can be kept in the freezer in an airtight container for up to a month.

Apple “Nachos” with Honey and Peanut Butter Drizzle

Ingredients

Scale
  • ¼ cup honey
  • ¼ cup almond butter
  • 3 apples
  • 2 tablespoons chocolate chips
  • 1 tablespoon shredded coconut

Instructions

  1. Slice the apples and spread on a plate.
  2. Drizzle honey and melted peanut butter mixture over the apple slices.
  3. Sprinkle chocolate chips and shredded coconut on top.

Festive Pomegranate Guacamole

Ingredients

Scale
  • 2 tablespoons red onion, finely chopped
  • 2 tablespoons fresh basil, finely chopped
  • 2 tablespoons fresh jalapeno, minced (or jarred if you can’t find fresh)
  • 2 limes, juiced
  • 2 large avocados
  • kosher salt, to taste
  • freshly ground black pepper, to taste
  • 2 tablespoons fresh pomegranate seeds

Instructions

  1. Combine the onion, basil, jalapeno, lime juice, and avocado in a medium-sized bowl. Use a potato masher or a fork to mash the avocado.
  2. Add salt and pepper, to your taste. Stir to combine all the ingredients. Fold in the pomegranate seeds.
  3. Serve the guacamole with tortilla chips or crackers. Store the guacamole in an airtight container in the refrigerator for up to 2 days. Enjoy!
