We all need a few quick recipes to put in our back pockets for those crazy nights where dinner seems impossible to pull off.  This here is one of those recipes that I use very often especially during the cold winter months.  It warms you up, fills you up and the best part – there are greens in it that your kids will actually eat!
Give this 15 minute soup a try the ext time you’re in a bind.  I guarantee you it will become a family favourite!

15 minute Tortellini Soup

Yields: about 4-6 servings
3 T olive oil
1 sweet onion, finely chopped
1 clove garlic, finely chopped
1/4 cup finely chopped parsley
6 cups of chicken stock
1 package of cheese tortellini
1 package of organic baby spinach, chopped
Heat your olive oil in a medium sized pot.
Add onions, garlic and chopped parsley and saute in olive oil.
Once the onions are soft, add the chicken stock and bring to a boil.
Add the tortellini.
A minute before the tortellini are done cooking, add in the chopped spinach.
Serve with grated Parmesan on top.  Enjoy!
